Meatloaf, what does the word mean to you?  Does it bring up frightening images of bad school lunches?  Or even worse, when you see the name meatloaf do you hear bad 70′s rock?  Take heart readers, this recipe can change all of that for you.  It is like therapy for those who have meatloaf PTSD. 

The first time I made this I thought it was annoying to saute vegetables before adding them to the meat mixture, but it really is worth the extra effort. And as for the chopping of the vegetables, I put them all in the food processor and they were finely chopped in no time.  The first thing I do when using lentils in a recipe like this is get them cooking before I do anything else.  Usually by the time the rest of the prep work is over the lentils are cooked until tender and ready to make their debut. This recipe made enough for us to have leftovers for meatloaf sandwiches!
