Curried Lentil Rice Salad

I like this dish.  I ate it by the bowl full.  I was the only one in my family who liked it which worked well for me because I could keep eating bowl after bowl and not feel guilty about needing to share.

It tastes exactly like you would imagine the recipe ingredients would; the plain yogurt is a little bit tangy, and the lentils taste full of garlic and spicy curry and lemon juice, the cucumber and pepper are fresh and crunchy.  It is light, healthy, and filling.  I left out the mint and added salt and pepper to taste with each serving, rather than into the whole recipe.   I also used greek yogurt to up the good for you factor.

I plan to make it this summer; I think it would taste very refreshing and replenishing after a long run or bike ride.  I’m looking forward to every bite.
